NDCP 501 Culinary Preparation

The student will Apply culinary practices to adapt cooking techniques, methods, ingredients, and presentation to develop and prepare dishes that achieve a sensory balance.

NDCP 502 Menu Design and Development

The student will apply culinary design skills to plan, develop, test, and implement a range of sustainably viable dishes.

NDCP 503 Culinary Leadership 

The student will apply leadership skills and behave in a professional and culturally responsive manner to enable a team to meet service requirements in a culinary environment.

NDCP 504 Culinary Operations Management

The student will apply knowledge of planning, forecasting and sustainability to contribute to managing food preparation, cooking processes, staff and kitchen resources in a culinary environment.

NDCP 505 Culinary Operations Compliance

The student will contribute to continuous improvement of operating procedures and compliance requirements, to resolve problems or create opportunities in a culturally sensitive, sustainable and productive manner in a culinary environment

This programme leads to employment opportunities in the hospitality industry in a broad range of hospitality establishments, including fine dining, functions and commercial kitchens, including specialist and commercial catering. Graduates may also progress to further study towards a Bachelor of Culinary Arts and hospitality management.

Entry requirements

To apply for the New Zealand Diploma in Cookery (Level 5), you’ll need to have successfully completed one of the following:

  • New Zealand Certificate in Cookery (Level 4)
  • National Certificate in Hospitality (Cookery) (Level 4)
  • An equivalent programme of study
  • Interview and supporting documents

You may be asked to attend an interview. If you live some distance from campus, the interview may be completed by phone.

Before your interview, you’ll need to provide copies of any relevant certificates or evidence of previous study or achievement.

Your personal commitment and readiness to succeed in the programme will also be considered as part of your application.

English language requirements

If English is not your first language, or your previous education was not taught in English, you’ll need to provide evidence of your English language ability.

You can meet this requirement through one of the following:

  • NCEA Level 3 with University Entrance
  • An International Baccalaureate Diploma or Cambridge A Level where teaching and assessment were completed in English
  • CELTA or CertTESOL
  • Completion of primary education (equivalent to New Zealand Years 1 to 8) plus at least three years of secondary education taught in English in New Zealand, Australia,
  • Canada, the Republic of Ireland, South Africa, the United Kingdom or the United States
  • At least five years of secondary education taught in English in New Zealand, Australia, Canada, the Republic of Ireland, South Africa, the United Kingdom or the United States
  • Completion of a tertiary qualification taught in English from a tertiary education provider in one of the countries listed above. This includes a bachelor’s degree, graduate certificate, graduate diploma, bachelor honours degree, postgraduate certificate, postgraduate diploma, master’s degree or doctoral degree
  • An approved English language proficiency test that meets the requirements below

English language test requirements

  • IELTS Academic: 5.5 overall, with no band below 5.0
  • TOEFL pBT: 550, with TWE 5
  • TOEFL iBT: 46, with a writing score of 14
  • Cambridge English: B2 First or B2 First for Schools, score 162, with no skill below 154
  • OET: Grade C or 200 in all sub-tests
  • NZCEL: Level 4 General or Employment
  • PTE Academic: 42, with no band below 36
  • LanguageCert: B2 Communicator International ESOL Written (LRW) High Pass, with at least 25/50 in each skill, and Spoken (S) Pass
  • Trinity ISE: ISE II, with at least Merit in each band

English language test scores must be achieved in a single test within the two years before enrolment.

To satisfactorily complete the New Zealand Diploma in Cookery (Level 5) and be awarded the qualification the student must successfully:

Cookery Strand

  • Achieve all of the graduate profile outcomes for that strand showing competence to a minimum of 120 credits in accordance with the programme schedule for the New Zealand Diploma in Cookery (Advanced) (Level 5) with strands in Cookery.
  • Complete required theoretical and practical course work and assignments.

The student will normally be expected to complete the Cookery strand of the New Zealand Diploma in Cookery (Level 5) full-time over 34 tutorial weeks.

(Please note: students failing to attend 80% of timetabled programme hours may forfeit zero fees entitlement)

Classes are held Monday to Friday, 9.00am-5.00pm at SIT's Queenstown campus.
